Polenta Crumbed Chicken Dinner

Well it is that time of year when everyone is starting to get healthy or at least trying to :)
So here is a recipe I had a play with last night. It was very yummy :)

You will need
*Baked potatoes*
4 potatoes washed
YIAH HERB AND GARLIC DIP MIX
4 TBSP butter
Foil

*Potatoe topping*
1 brown onion
1 cup diced bacon
Light sour cream
Grated cheese

*Polenta Chicken*
2 chicken breasts cut into strips
Cup of low fat Greek yoghurt
1TBSP YIAH LOUISIANA CREOLE DIP MIX (I ground my dip mix up a little to help evenly distribute the flavour but you don't have to do this)
1 cup polenta
YIAH GARLIC EVOO

You will also need some steamed veg bags or you can cook your own :)

Step1- Preheat your oven to 220 degrees Celsius
Step 2- Place your potatoes on a piece of foil each and cut a cross on top.  Add a TBSP of butter and sprinkle with YIAH HERB AND GARLIC DIP MIX. Wrap your potatoes up and place on and tray and into the oven. Set timer for 35 minutes
Step 3- Mix your polenta and YIAH Dip Mix in a bowl.
Step 4- Coat you chicken strip in yoghurt, then roll in the polenta mix ensuring all is cover and place on a plate.
Step 5- Repeat step 4 for all of your chicken.
Step 6- Cover in Cling wrap and place in the fridge for 15minutes
Step 7- Get a large fry pan and add a "splash" of YIAH GARLIC EVOO.
Step 8- Cook your chicken in the pan. The polenta will go a golden brown once the side is cooked so flip the chicken.
Step 9- While chicken is cooking brown your onion and bacon bits in a small fry pan for your topping.
Step 10- The timer for your potatoes should be going off about now. So check they are cooked all the way through.
Step 11- Place your steam veg in the microwave for time specified on packet.
Step 12- It is time to plate up :) Remove your potatoes from foil and place on plates. Add sour cream, then bacon mix and then cheese on top. Add a few pieces of chicken and your steamed veg to the plate and you have a gorgeous meal :)

NOTE:
The Louisiana Creole is a spicy dip so if cooking for kids might be a better idea to use a YIAH DIP LIKE ; MEZE, CASABLANCA or SMOKEHOUSE BBQ

After finishing this recipe I thought it would be a great idea to add some YIAH HERB AND GARLIC DIP MIX to the yoghurt :)

Baking day today YAY!


I am looking forward to getting into the kitchen today and playing with my YIAH BAKING SPICES :D 
I am going to play with my brownie recipes, Grain-Free Pumpkin Bars, a dairy free cheese cake and who knows what else I will come up with. Stay tuned for photos and recipes :D

Moroccan Mint Pasta



You will need

1-1.5 cups warm cooked pasta
Splash of YIAH Garlic EVOO
2TBSP YIAH Moroccan Mint TEA
1/2 cup frozen peas
2/3 cup thicken cream
1 diced brown onion
4 rashes short cut bacon
Parmesan cheese


Method
Step 1
In a mortar and pestle pound your YIAH tea then add it to your cream (put it through a small sieve as there are some larger parts.) Then put in the fridge until you need it. 
Step 2
Put your oil, bacon and onion in a medium fry pan and brown. 
Step 3
Add your peas and mix for a minute or two. 
Step 4
Add your tea/cream mix to the pan and stir over a medium heat until cream warms. 
Step 5
Add your pasta and toss through making sure to well coat the pasta. 
Step 6
Place in a bowl, top with Parmesan cheese and enjoy.

YIAH COOKING AND TRAINING DAY

On Sunday the 5th of January 2014 I was invited to a Your Inspiration At Home day filled with training and cooking. So not only did I learn a lot about where I can take my business but also some amazing recipes.

So here is one that I have tried at home. 




YIAH BBQ PIT Chicken
(Recipe from Narelle - I have changed it slightly)
Ingredients
* 5 Chicken Lovely Legs
*Splash of YIAH Garlic Extra Virgin Olive Oil
*2-3 TBSP BBQ Pit
* 1/2 cup BBQ Sauce

Directions
1. Places everything in the bowl except the chicken. Mix well. 
2. Add the Chicken Legs, coat in the sauce and set aside for 10 minutes. If you feel it needs it you can add a  couple spoons of water.
3. While you are waiting for the chicken set your oven to 200 degrees Celsius and line a baking tray with baking paper 
4. Pour in the chicken and marinade. 
5. Place oven for 20 minutes then turn the chicken and cook for a further 15 minutes at 180 degrees.




YIAH CHRISTMAS :)

I made a lot of goodies over Christmas and I will add them all when I get a chance but I thought I would quickly share this with you all :)


My mum asked if I could put together a few treats to take to her Christmas Party. So here's what I come up with 
YIAH White chocolate mousse and berries.

Perfect HOT weather dinner :)

Recently I couldn't be bothered cooking myself dinner, I had already been in the kitchen cooking Spag Bowl in the heat for the kids and didn't want to eat that so a threw together a little platter for my mum and I :) Was delicious. So quick, simple and easy not to mention filling :)


This platter consists of
* YIAH Beetroot Dip
* YIAH Honey Caramelised Balsamic 

* YIAH South American Picante Dukkah with YIAH Italian Primavera Olive Oil
* YIAH Lime & Cracked Pepper Cashews
* Carrott sticks, herb bread, multigrain rolls, tasty chese & feta cheese.

My YIAH Cherry-Choc Brownies

My YIAH Cherry-Choc Brownies. 



Prep time 15mins
Cook time 15-20mins
Servings 12
Oven temp 180degrees

Utensils needed. 
Microwave safe bowl
Knife
Mixing bowl
Wooden spoon or hand mixers
Baking tray
Baking paper
Spoon/spatula 

Ingredients 
200g dark chocolate pieces
250g unsalted butter clubbed
1/2 cup caster sugar
1/4 cup brown sugar
4 heaped TBSP SR Flour
4 eggs
2.5 TBSP YIAH Black Forest Dukkah
Good hand full of dried or glazed cherries
Small handful of slithered almonds 
Good quality ice-cream
Additional YIAH Black Forest Dukkah

Step 1
Preheat oven to 180 degrees Celsius and line a baking tray with baking paper. 
Step 2
Place dark chocolate and butter in a microwave bowl. Put in microwave on melt for 25 seconds. Take it out and mix till melted and combined. If more time is needed do it in 10 second lots. Once melted set aside to cool slightly. 
Step 3
In a mixing bowl place caster sugar, brown sugar, flour, eggs and YIAH dukkah. Mix until all combined. Now add your melted mix and combine the two. 
Step 4. 
Spoon into your baking tray - spread it out to all the sides. 
Step 5
Sprinkle the cherries and almonds over the top of the mixture. 
Step 6
Place in the oven for 15-20 minutes. Then remove and allow to cool. 
Step 7
Once your ready to eat prepare your ice-cream
-place YIAH dukkah in a bowl. 
-get a nice rounded scoop of ice-cream place in the bowl of dukkah and roll it around until coated. 
Step 8
Serve your brownie with ice-cream and enjoy

Spag bowl from scratch YIAH style :)

So as mentioned previously my son is so super fussy, he really doesn't eat much of anything and the only decent meal he does eat is Spag Bowl - So I had been so excited to make one with my YIAH products and see if he would eat it and SUCCESS he loved it and wanted it again the following night :)
So I am very excited to share this one with you all.



Ingredients

2 cups of fresh diced tomatoes 
1.5 TBSP YIAH Herb and Garlic Dip Mix
1 TBSP YIAH Salsa Dip Mix
2 clove of fresh garlic crushed
1 diced brown onion
1/4 green capsicum diced
2 TBSP Home made tomato paste
Salt & Pepper
1/2 Kg mince
2 cups cooked pasta
Cheese to serve. 

Directions

1. Put the diced tomatoes, onions, garlic, capsicum, YIAH Herb & Garlic Dip Mix and YIAH Salsa Dip Mix into a blender or processor until pureed. Now set aside until you need it. (YOU DONT HAVE TO DO THIS IF YOU LIKE YOUR SPAG CHUNKY)

2. Brown off your mince in a large fry pan. Once cooked drain to remove all the fat in the bottom of the pan.

3. Add your pureed sauce mixture into your mince and stir through. Now add the tomato paste and season with salt and pepper to your liking. 
Taste - you may wish to add a little more YIAH dip mix depending on the flavor you are after. 

4. Place pasta in a bowl top with your mince and sprinkle with cheese and serve. 

YIAH Tandoori Chicken

Here is the first recipe I "created" with my YIAH products YUM YUM.



Tandoori Chicken

Ingredients

  • 1 cup. Thick Plain Yoghurt
  • 1 tbsp. Minced Garlic
  • 0.5 tbsp. Minced Ginger
  • 1 tbsp. Lemon Juice
  • 1.5 tbsp.s YIAH Asian Inspired Olive Oil
  • 1 tbsp. YIAH Tandoori Spice Blend You may wish to add more or less depending how intense you want your flavor.
  • 2 Diced Chicken Breasts
  • 1 Diced Onion
  • 1 Thinly Sliced Carrot
  • 1.5 cup.s Cooked Rice
  • 1 Lemon Cut into wedges

Directions

1. Combine Yoghurt, Garlic, Ginger, Lemon juice, 1 TBSP Olive oil & Tandoori spice in a bowl. (Taste to check you are happy with the flavours)
2. Stir in your Chicken breast, cover and place in the fridge for 3 hours
3. After your 3 hours, in a fry pan saute the Onion and Carrot in 0.5 TBSP of Oil, add your Chicken. Stir occasionally until cooked.
4. While chicken is cooking prepare your rice
5. Serve on a bed of Rice with a wedge of Lemon and enjoy :D

My Bundy Pulled Pork

Over the Christmas Holidays we had family come to stay. They are country people so love roasts, meat and veg and those sorts of meals. But I was excited to share as many YIAH meals with them as possible. But both my Brother In Law and My Husband are Flavor Police http://recipes.yourinspirationathome.com.au so my brain went into over drive.

I decided that Pork is always a winner with them so that was a good start. Then it occurred to me that if I could incorporate ALCOHOL into the mean then we would have a double winner :D
So I had a look at the YIAH online recipe site (http://recipes.yourinspirationathome.com.au) looked up Pork and a recipe for Pulled Pork came up... I decided that it was such a simple recipe that with a few adjustments I could make something that everyone would like.

So I got out my slow cooker, started the process of "cooking" So I chopped an onion, poured a few things into the cooker, rubbed the meat with the YIAH Pulled Pork Spice. Added the meat and the onion and then stole a Bunderberg Rum can from the fridge.

I then got ready and we headed to the beach for the day :)

Once we arrived home dinner was almost ready :) and the house smelt amazing. All I needed to do now is throw a few veggies together and dinner was done.

So as I told everyone to get ready for dinner the men in the house all offered to cut up the Pork for me & when I told them I had it under control they of course didn't believe me. So they came into the kitchen to see me pulling the pork apart with no more then two forks. This then lead to a taste test by them both and after that I am lucky I got any of it onto a plate. It was a definite hit and hubby is already begging me to make it again. So I will share the recipe with you all :) you will have to excuse the poor photo as everyone devoured it all very quickly



Bundy Pulled Pork

Ingredients

  • 950 gs Shoulder Pork
  • 3 tbsp.s YIAH Pulled Pork Spice Blend
  • 0.5 cup. Bunderberg Rum and Coke * You will just have to drink whats left in the can :)
  • 2 tbsp.s Tomato Paste
  • 1 cup. Vegetable Stock
  • 2 Sliced Onions
  • 4 Steam Vegetable Bags
  • 8 Dinner rolls
  • 1 Garden Salad

Directions

Step 1 -
Slice your onions & place in a slow cooker with Garlic, Rum and Stock and turn on high.
Step 2-
Rub the YIAH Pulled Pork Spice all over the pork and then place it in the slow cooker. It should be covered in liquid.
Step 3 -
Turn pork after 5 hours and then continue to cook on low.
Step 4 -
After another 3 hours the pork should be perfect. Remove it and it should just fall apart when pulled with 2 forks. Drizzle some of the cooking liquid over the meat.
Step 5 -
Serve with Steam veg and/or Salad and some nice warm dinner rolls.
(Can be eaten as a meal or place the pork on the bun roll)

Hello Hello Hello

Hello everyone :)
My name is AMY and I love to cook :) I love flavor, spice, healthy & tasty food but what I hate is processed food, with fillers and those scary numbers you have no idea what mean, all the preservatives that are not only really bad for us but really don't taste good. Not to mention food that is flavorsome and healthy is usually difficult to cook or you have to go to a restaurant and pay a large price tag.
But eating with intense flavor can be hard when I have a fussy husband, a beyond fussy 8 year old and a 2 year old who will eat anything she sees someone else eating - So I am always experimenting with food & always looking at ways to hide the good stuff in our food :)

So when I recently had a Your Inspiration At Home - Food Party, I knew I needed the products in my home. I was blown away by not only how tasty it was, but how SIMPLE it was to cook with it.
So with out hesitation I said sign me up :) Just over a week later I received my Kit full of Dip Mixes, Dukkahs, Oils, Vinegar's, Spices, Rubs, Sugars, Teas, Coffees, Chocolate Powders. And as I stood there staring at it all the big question running through my head was "OMG WHAT  DO I COOK FIRST!"

So since starting I have been making at least one INSPIRED meal a day. Desserts, Mains, Drinks, the list is endless :)



So I decided I need to share all these with everyone, I didn't want to flood Facebook with all of my recipes and ideas so this Blog was born :)
